A diet without meat or even without any kind of animal source products may place consumers at risk for micronutrient deficiencies. The aim of the presented study was therefore, to investigate differences in both micronutrient intake and status between omnivores, vegetarians and vegans in Switzerland. A total of 206 healthy adults between the age of 18 and 50 years were recruited. Measures of weight and height were taken. Consequently, the prevalence of folic acid deficiency was, with 58%, highest in this group. Despite higher Fe and Zn intakes in the vegan groups, their status of both minerals was lower compared to omnivores and Zn deficiency was more prevalent. All three diet forms have been shown to have advantages and disadvantages regarding micronutrient status. Senator Barack Obama: The young lady in the t-shirt, right there. Nikki Benoit: Thank you, Senator, very much for your strong environmental position. The United Nations actually has reiterated that factory farming is contributing more to global greenhouse gas emissions than all of transportation. I think that as a global community we really need to be the leader and moving more towards non-factory farming animal agriculture. It's very egregious. There's 10 billion land animals that we are funnelling our precious water and grain through when 70 per cent of all of our grain could help feed the world's hungry. So, as the next leader of the most amazing nation in the world, how can we set the example on the more nutritional, plant-based diet that's more eco-friendly and sustainable, that can maintain our water resources and all of our grain. Thank you very much. Senator Barack Obama: Okay. Well, it's a great question. Now, I have to say in the interests of full disclosure, that I do like a steak once in a while. I'm just being honest. I like barbecue. I'm not going to lie. But the young lady makes a very important point and that is this: right now, our food system world-wide is under enormous pressure. It's under enormous pressure because as a consequence of climate change, you've had severe changes in weather patterns. We don't fully understand what these effects are. But, for example, Australia's had huge drought which has taken a lot of crops. Grain production has been much lower. And supplies are tight. You're starting to see riots around food in places like Haiti and other poor countries around the world. And what is also true is that as countries like China and India become wealthier, they start changing their food habits; they start eating more meat, more animals. And what happens then is because it takes more grain to produce a pound of beef than if they were just eating the grain, what ends up happening is that it puts huge pressure on food supplies. Americans would actually benefit from a change in diet. I don't think that that's something that we should legislate but I think that it is something that, as part of our overall health care system, we should encourage because, for example if we reduced obesity down to the rates that existed in 1980, we would save the medicare system a trillion dollars. We would reduce diabetes rates. We would reduce heart disease. So, the fact that we subsidise some of these big agribusiness operations that are not necessarily producing healthy food and we discourage, or we don't subsidise, farmers who are producing fruits and vegetables and small scale farming that gets produce immediately to consumers as opposed to having it processed. The fact that we are not doing more to make sure that healthy food is in the schools. All those things don't make sense. It is important for us to re-examine our overall food policy so that we're encouraging good habits and not bad habits. For example, just making sure there are more fruits and vegetables in school lunch programs. That would make an enormous difference in how our children's diets develop. That would make us healthier over the long term. It would cut our health care costs and maybe it would help people elsewhere in the world, who are in less wealthy countries, feed themselves as well. So, it's a great question. It's important. As a mother it was important to me to be here because we are presented with a unique opportunity to help this generation of young people become more compassionate, be kinder to the environment and make healthier lifestyle choices. Kids today are appalled to learn that animals killed for cheese burgers and chicken nuggets live crowded by the thousands in dark, filthy sheds, are mutilated and are slaughtered by having their throats slit while they are still conscious. Violence and suffering is common in the industry but offering kids the chance to choose meals that are free of cruelty encourages compassion. Twelve per cent of millenials call themselves faithful vegetarians - up from four per cent of baby boomers - and another study showed that 45 per cent of younger consumers regularly eat vegan food and are looking for more options. Today's generation is growing up with considerable knowledge about the environment and how individual decisions can impact it. The average Californian uses 1500 gallons of water per day - nearly half of that can be attributed to meat and dairy products. It takes 477 gallons of water to produce a pound of eggs, 900 gallons to produce a pound of cheese, 1000 gallons to produce a pound of milk and 2500 gallons of water to produce a pound of beef. Animal agriculture is responsible for 80 per cent of US water usage. In addition, the United Nations says that raising animals for food is one of the top contributors to the most serious environmental problems. Giving 600,000 students the ability the make eco-friendly decisions every single day gives them the tools and the power to help reverse climate change, conserve water, prevent pollution and fight obesity. As a mother, I understand the challenge of trying to raise healthy kids when they are bombarded with appealing ads for junk foods. When people ask me if being vegan is hard, I generally tell them it's challenging at first, but it's pretty easy after a while (depending on where you live). But do you know who it's hardest for? Vegan kids. Kids are inundated on a daily basis with messages from the meat and dairy industry. As the next generation of potential animal consumers, big ag really does spend a fortunate targeting children with Happy Meals, cheese sticks, yogurt drinks, chicken nuggets and a plethora of other foods designed to make kids bond emotionally with animal products at an early age. But it doesn't end there: schools are a prime focus of advertising dollars, and animal agriculture spends a fortunate in your tax dollars promoting dairy, meat and eggs to children in the classrooms and beyond. One of the favourite tactics of the animal agriculture industry is encouraging children to support farming thanks to feel-good, free activities that are friendly to schools.  As a result, school visits to zoos, farms and other establishments are often heavily subsidized. (18 Oct 2017) LEADIN: Ice cream producers in Italy are creating new recipes aimed at people looking for a healthier treat and people with food intolerances and allergies. Chefs at the Gelato University in Bologna claim the new blends marry specific dietary needs without sacrificing taste. STORYLINE: The Italians have always called ice cream "gelato" - it's made with milk and/or cream and is different to what is called gelato in non-Italian speaking countries. But here at the Carpigiani Gelato University of Bologna students are learning to make alternatives to the traditional cream based dessert. While ice cream is fattier, has more air and is usually produced in mass quantities, its cousin contains more milk than cream, has a smoother texture and is made daily in smaller batches. Basic ingredients for both gelato and ice-cream include milk, sugar and sometimes eggs, making it a forbidden treat for – among others - the lactose-intolerant, diabetic and vegan population. More and more consumers the world over have started to pay greater attention to the quality of their meals or embrace ethic-conscious diets. Some are prompted to do so as eating the wrong food may cause them a serious and sometimes fatal allergic reaction. In a 2013 report the World Allergy Organisation - an international umbrella of allergy, asthma and clinical immunology societies – said food allergies are a "rising global health problem" affecting between 220 and 250 million people in both developed and developing countries; children are harder hit than adults, the report adds. The Gelato University has now come to the rescue by introducing a variety of recipes that replace allergy and intolerance-causing food as well as animal ingredients. Luciano Ferrari is the Carpigiani Gelato University's technical director. The educational institution is based in Bologna and offers gelato-making courses; it's an offshoot of Italian company Carpigiani that supplies gelato-making equipment to shops across the world. Ferrari shows how to make two types of recipes: a sorbet with fruit, sugar cane and free of animal ingredients; and an almond and dates gelato combining vegetable drinks, cocoa butter, yogurt's probiotic properties as well as inulin, a plant-based natural fibre. The first recipe suits both vegans and lactose-intolerant people as it contains neither animal ingredients nor dairy products. The second caters to the health-conscious and was devised under the supervision of experts from the European Institute of Oncology's Smart Food Project. The Gelato University started to devise alternative gelato recipes to suit different dietary needs about seven years ago, Ferrari says; gelato experts were initially prompted by requests to introduce natural thickening and emulsifying agents in place of traditional ones like mono and diglyceride fatty acids. From there, the list just kept getting longer. "We've seen a rising demand for organic products; bit by bit that was followed by a request for gelato recipes fitting those who are food intolerant or have allergies, (requests for) products with less sugar or without any added sugars, for low-fat ingredients or that contain healthier types of fats," says Ferrari. In addition, vegan consumers asked to replace cow milk with plant-based milk, Ferrari says. Faced with the challenge, Carpigiani gelato-makers have tapped into their creativity to deliver new yet tasty recipes. Ferrari says the key is simple - finding ingredients that still do the job and taste as good as traditional ones. In making the sorbet, Ferrari blends together orange juice, pear, pineapple, blackberries, blueberries, strawberries and kiwi.
